There are many ways to raise and process chickens - we use the methods that give the best results, regardless of the extra work or expense involved. Once you taste the difference, there's no going back!
We raise a breed of chicken named Cornish Cross - most likely what you're used to buying from the supermarket, but the similarities end there. Our chickens are fed certified organic grain and live on pasture starting as soon as they're old enough. Every day, they're moved to a new area of pasture with fresh grass, bugs and seeds, and are encouraged to "exercise" throughout the day.
We process the birds in small batches, throughout the summer. After processing, the meat is allowed to "rest" for a period of time before being shrink-wrapped and deep frozen. This resting period allows the meat to soften through a natural tenderization process. The result is moist, flavorful and tender chicken that you just won't find in the average supermarket. Try one for yourself and see the difference!
Note: Our finished birds tend to average about 5 lbs, with a range of 4-6 lbs, with a few larger or smaller outliers.
